I wanted to share what I ate over the weekend!
Originally I had planned a post-Valentine’s Day food day, but my stomach has been kind of off since Friday, and I’ve just wanted to lay in bed. So we’ll probably do something else later on.
I also decided to do the whole weekend because Saturday was kind of a boring eating day, so I figured Sunday could make up for it some more.
Breakfast – Banana and peanut butter oatmeal, topped with bananas, frozen blueberries, chia seeds, and maple syrup. I added more maple syrup as I ate it because I didn’t really sweeten the oatmeal with anything other than the half of a banana I used.
Snack – Trader Joe’s chips with bacon cheddar ranch dip. We went shopping at Trader Joe’s and my husband saw this dip and he wanted to try it. We also decided to try these chips and they are sooo good. Way better than Ruffles (in my opinion).
Dinner – Pizza! Half pepperoni and cheese, half no cheese with bell pepper, pepperoni, and nutritional yeast. Since my stomach has been weird, I figured I’d have some pizza without cheese. It was pretty great. Granted, I’ve always enjoyed pizza without cheese. I ate two slices! But we used the Trader Joe’s crust. It was pretty good! Although, I had to use a higher temperature than what the directions recommended. Dessert – Ben and Jerry’s non-dairy ice cream, PB & Cookies flavor.I decided to try this out because Ben and Jerry’s and I’ve been feeling more and more lactose-sensitive (RIP cheese). But it is SO FANTASTIC. It’s made with almond milk and has a ton of cookie bits in it. So worth it. I probably had a 1/4-1/3 cup of ice cream.
That’s all I ate on Saturday. It was pretty light as far as eating goes, but I ate my breakfast relatively late, and dinner relatively early. But I try not to eat if I don’t feel hungry and stop once I start to feel full.
Unfortunately, today was also a pretty boring food day. Nothing too crazy, but it was also relaxing and a little productive.
Breakfast – Cereal
We had a nice and lazy morning, so we had breakfast pretty late (probably around 11/11:30). I had a bowl of Almond Honey Bunches of Oats. I didn’t take a picture because it was just plain old cereal, and I forgot.
Lunch – Pizza!
After a quick trip to the store we decided to just reheat some of the pizza from yesterday. I ate two slices without the cheese, added some nutritional yeast, and then topped it with some arugula and balsamic vinegar. So yummy!
Dinner – Chicken Tenders with Fries and Broccoli I decided to make some chicken tenders with fries, just because we had it and it sounded pretty good. We also have a huge jar of sauces from Chick-fil-A and I wanted to use some of them. So I made somewhat of a copycat recipe, with a side of fries and broccoli!
To make the chicken, I just dredged them with egg and milk mix, and then a flour mix that contained chili powder, paprika, garlic powder, dried basil, salt, and pepper. To give it a little sweetness, add some powdered sugar to the flour mix. It tastes amazing.
Unfortunately, I didn’t have any so it was lacking a little bit. I tried baking them in the oven, but the flour wasn’t really doing the browning thing, so I fried them in the fry oil after they cooked in the oven (for about 15 minutes). They cooked perfectly and were so juicy and moist on the inside.
I didn’t really eat anything for dessert because I was so full from dinner and my head hurt a little bit. So we just laid down and enjoyed the rest of the night.
And that’s all I ate this weekend! Sorry it was kind of boring, but it is what it is. Hopefully the next time I plan to do one of these posts, I’ll have some more exciting foods planned out.
