Lunch Meal Prep

Last week, in an attempt to save some money and eat a little healthier, I decided to do some meal prepping for the week.

I’m horrible at packing my lunch for work, and my husband is terrible at eating lunch at home, or if he’s at school. So I figured this would be the best way to alleviate the problem of not eating lunch.

I decided to go with a meatless lunch this week just because it’s cheaper and I had this giant sweet potato I needed to use. So I went with a grain bowl that had brown rice, tri-color quinoa, black beans, chickpeas, sweet potatoes, spinach, kale, and a lemon-tahini vinaigrette.

Here’s the breakdown of what went down:

This was from one sweet potato! 😮 I seasoned with olive oil, salt, pepper, garlic powder, and paprika.

Cooking spinach. I used more than this, but I had to cook it in batches.

This is also incredibly easy to eat at work. You just mix everything together, heat up, and then add the vinaigrette to the bowl.

There are 8 containers, meant for Tuesday-Friday for my husband and I. They turned out to be pretty delicious and easy to heat up. I would definitely recommend doing a lunch prep like this, especially if you’re looking to save money and eat healthier.
